I just said a bad word. It won’t be my last. It’s football season once again, and that means 12 Saturday afternoons spent shouting profanity, stomping my foot and screaming threats at my TV. lululemon scuba hoodie purple stripeOver the next few weeks, mild-mannered Michael Knock, who has his PhD and sings in the church choir, will turn into an unrecognizable Mr. Hyde-like demon every time the Iowa Hawkeyes take the field.hoody kim profileAt least that’s how the other Michael sees things. In my own mind, I am the ever supportive fan shouting words of encouragement such as “Way to go guys!” and “You’ll get ’em next week!” How do I explain the different perspectives? Well, Michael drinks heavily on Hawkeye game days. I am sure he doesn’t always remember things properly.Of course it is possible that there may be some truth to his claims.
Last weekend after the Hawkeyes whipped Illinois State 31-14, I started texting my friend Mark, who had been at the game. We don’t even play Minnesota until November, and yet the hated Gophers came up in our conversation, probably because Mark’s daughter is a freshman at the U of M. I warned Mark not to come by my house wearing any Gopher gear. Then I added: “Michael has a Minnesota sweatshirt. I haven’t spilled bleach on it … yet.”Mark responded: “You will know when it’s the right time.”Score one for Mr. Hyde.I fear that my alter ego will be on full display this Saturday as the Hawkeyes take on in-state rival Iowa State. This game, like the ones against Minnesota and Nebraska, is one of my least favorite of the year. Win the game and all is well. Well, I don’t even want to contemplate anything so awful.Actually, I can contemplate it. I was in the stands in 2002 when Iowa blew a 24-7 halftime lead to lose to the Cyclones 35-31. I was there again in 2012 when they lost 9-6 and again last year when they lost 17-14.
In fact, I think Kirk Ferentz should pay me to not attend the game in Ames on Saturday. Clearly I am a jinx. What do you say, Kirk? But if I am not at the game, what will I do with my time? While Hawkeye football may inspire me to great anger, it also can inspire me to great acts in the kitchen. From nachos to chips and dips to pulled pork, football brings out that part of me that loves bar food.So what’s on the menu this week? I decided to try something new, and by “new” I mean something that is new to me. Somehow in all of my years of writing tailgating columns I have never written a word about chicken wings. That oversight gets corrected this week with wings recipes that range from the sweet to the spicy to the “holy crap that’s hot.” In fact, I think that’s one of the appeals of eating wings. They are a blank canvas on which one can paint any number of flavors. Thus, this weekend — no matter which team is your favorite — if things on the field start to get a bit too dicey, get into the kitchen and grab some wings.
And start practicing this phrase: “Better luck next week boys!” I will be in the basement with Michael’s sweatshirt and the bleach.I would classify these wings as more sweet than sticky. Yes, there’s a little bite from the Sriracha, but that’s more than balanced by the brown sugar.I liked the idea of making wings in the slow cooker. It allows me lots of down time to do other things. Moreover, the meat comes out fall-off-the-bone tender. It really is a win-win.This recipe comes from damndelicious.net, and it is very easy to assemble. Stir together all of the sauce ingredients in a bowl, and dump it over the wings in your slow cooker. Set it to low and forget it for three to four hours. Sure, there’s a little more work to do after that, but overall it’s still pretty easy.3 cloves of garlic, mincedPut your chicken wings into your slow cooker. In another bowl, stir together the soy sauce, vinegar, brown sugar, honey, garlic, Sriracha, ginger, pepper, and onion powder. Pour over the wings.
Add the lid, and set the slow cooker to its low setting. Cook for 3 to 4 hours.Stir together the cornstarch with 2 tablespoons of water. Stir to combine with the sauce (I removed the wings first to ensure that the thickener really gets integrated, but you don’t have to do this). Cook for 15 minutes on the high setting until the sauce thickens.Line a baking sheet with aluminum foil. Preheat your broiler to high Put the wings on the baking sheet, and broil for 2 to 3 minutes. This will caramelize the sugars in the sauce nicely. This is one of those deceptively spicy recipes. Yes, you have the maple syrup to keep things a little sweet, but then there’s the added heat from the hot sauce and chipotle pepper. It’s a nice combination. The recipe comes from Food and Wine magazine, so be sure to choose a nice Chardonnay to sip with your wings. Ah, who am I kidding. Wings are made for beer.2 ½ tablespoons red hot sauce1 canned chipotle pepper in Adobo saucePreheat the oven to 500 degrees.
